Peach Overnight Oats

If you are into meal planning, you’ve probably already heard of overnight oats. Super easy to assemble, individually portion them, pop them in the refrigerator, and you’ve got breakfast ready to go in the morning! I feel less stressed when I know I have a healthy option to grab in the morning when I’m on my way out the door without time to eat.
When overnight oats started to become popular, I initially thought that the only obvious difference between overnight oats and regular oatmeal was the temperature. I love a big bowl of hot oatmeal in the colder months, not so much when it’s 90 degrees in July! After some reading on whole oats, I learned that since the oats are soaked overnight, this starts to break down the starches that allow you to digest the oats easily. Plus, the oats maintain more of the natural nutrients, instead of cooking them down by heating the oats when making the more traditional cooked oatmeal. This means they are not only delicious, and convenient but they are good for you too!
Have fun with these, just like you would with making traditionally cooked oatmeal. Play with your favorite flavors and take advantage of what’s in season. The peaches in this recipe can easily be swapped out for apples, bananas, blueberries, pumpkin, the options and combinations are only limited to your imagination!

Overnight Peach Oatmeal

- Chop peaches into bite-size pieces. Set aside.
- In a large bowl, mix the rolled oats, pecans, salt, and raisins. Add cinnamon if using.
- Add milk to the oatmeal mixture and stir until dry ingredients are well coated. The mixture will be thick.
- Mix honey into the yogurt so that it is evenly incorporated into the oatmeal. Stir yogurt with honey into the oatmeal mixture.
- Divide equally into four jars or containers with lids. Top with chopped peaches.
- Refrigerate overnight.
- In the morning, give your oats a final stir before eating. The bottom of the jar or container could have absorbed the majority of the moisture leaving it wetter than the middle and top. Add some extra milk, if you feel it’s too thick for your liking. A good stir will ensure you’re mixing all the textures from the oatmeal, nuts, fruit into every bite!
