Strawberry Cream Cheese Pastries

These are so beautiful and will impress any house guest! This recipe is the perfect shortcut to get something almost homemade on the table quickly. The puff pastry and cream cheese center give them a Danish-like pastry look that makes them a perfect addition to Sunday brunch or Mother’s Day breakfast!
This summer our cousin offered up her family's lake house a few hours north of where we live. We jumped at the opportunity to wake up to new scenery after spending all of 2020 in our own home. It was so generous of them to offer up their home to us and allowed us to get a taste of lake house life.
While I was expecting long lazy days by the water, I was surprised by all the local farms; especially the Amish community in central Michigan. We stopped almost every day at a small Amish farm stand and purchased two quarts of strawberries for the day. Each day the man would say to us “this might be the last of the strawberries for the season.” I think he said that to everyone purchasing strawberries, luckily every day we went back there were still strawberries available. On our way out of town, I bought every quart at the market to make strawberry jam and these beautiful pastries!
We are so grateful for the opportunity to escape for a few days and experience lake house life as well as taking in all the lovely scenery in and around central Michigan!

Strawberry Cream Cheese Danish

- Adjust your oven rack to the center position. Preheat the oven to 400 degrees.
- Beat egg and water in a small bowl. Set aside.
- Unfold the thawed puff pastry sheets on a lightly floured board. With a sharp knife cut each sheet into 6 equal size pieces. This will be easy to do , if you follow the folds on the sheet.
- Using the same knife, lightly score a border 1.2 inch around the rectangle to create a border. Be careful not to cut through to the puff pastry. Using a fork make a few holes around the center of the border that you just created. This will ensure the center does not rise. Transfer the puff pastry rectangles to the baking sheets lined with a silicone baking mat or parchment paper.
- In a bowl, mix the softened cream cheese and the strawberry jam together until smooth.
- Arrange strawberry slices on top of the cream cheese mixture.
- Brush border of puff pastry with egg wash and sprinkle with the sparkling sugar.
- Bake for 15-18 minutes, or until the puff pastry borders are lightly golden brown.
- Allow to completely cool on a baking rack.
